Chicken Tostadas


After spending 18 months in the San Diego area, working mostly among Mexicans, I got to the point where I craved Mexican food and could have eaten it three times a day and been happy.  Well, 8-ish years later, it's been a while since I've tried cooking real Mexican food.  This recipe for chicken tostadas is AMAZING and took me right back to eating the authentic food cooked by the Mexican families I worked with.  The leftovers were great.  I ate them for about 4 consecutive meals and could have kept going.  For the leftovers, make sure you fry up the tortillas fresh.

  1. I'm excited to try this! We have not been successful in cooking anything like the authentic stuff we've had here. I guess we haven't really tried - we basically cook traditional (our version) tacos.

  3. This is another dish that would take me away from my cooking norms--roasting the veggies. I keep thinking this is what I'll ask for when we come visit, but I might not be able to wait.

  5. I made this on Sunday for the second time and we love it. My fist attempt was good but not great - because I forgot to put the limes on. People, DO NOT FORGET THE LIMES!

    Another pointer: In my opinion the Mexican crema didn't add anything special so just get sour cream which you know you'll use.

    Finally, the leftovers make a great salad with a little ranch dressing.
